For this Japanese F&B client, the traditional food court model was picked apart, then reassembled into an organic whole where lines and curves dominate and features are softened through the extensive use of light wood and warm spot lighting to provide a worthy visual counterpoint to the food. The entrance was tunneled into a series of sine waves barely hinting at the interiors to come. On emergence from the tunnel, attention is drawn inwards towards the runway of serving counters on one side and a series of dining ‘rooms’ on the other that – through the use of timber screens to give a sense of open enclosures – alternatively face the open kitchen and the interior.
